Cranberry Pork Chops

The family scarfed this down!!! And it was easy...only took (sides included) 30 minutes!
Ingredients
1 TBS Veg. oil
1 medium yellow onion, sliced ( I only used 1/2 onion)
4 pork-chops
salt & pepper
1 cup (16oz) whole cranberry sauce
1/4 cup Orange Juice
Directions
In a large skillet, heat oil over medium-high heat. Add onion and cook until tender, about 4 minutes. Season pork chops with salt & pepper, add to skillet. Cook unitl browned on both sides, about 4 minutes. Stir cranberry sauce and orange juice into skillet. Reduce heat on low and simmer, covered, 5-7 minutes more.

The original recipe said serve with whole grain rice...but we just had rice last night so I did mashed potatoes and broccoli. It was delicious! Everyone ate their whole plate full of food, that's 1/2 a pork chop per kid! They liked the cranberry sauce/dip so much they dipped their broccoli in it! William even asked for more pork-chop but I only made 3, its usually enough.
